This unique vinegar is produced in Catalunya by Mr Josep Puig following this method Mosto (unfermented grape juice) is blended with wine from the preceding year. Stored in small tanks of about 500 litres-criaderas, it is left to acidify very slowly for 7 months. The vinegar is then decanted into oak & chestnut casks only a small percentage is taken at any one time from the criadera. Once the vinegar in the casks reaches the desired level of sweet and sour (agridulce), 7 to 8 months depending on the casks, the procedure is then as with the criaderas taking out only 30%. Finally a blend from the different casks is produce and bottled.
